I’ve seen this done with black beans before. I prefer to just eat actual brownies and actually feel satisfied by them instead of like they are a poor substitute.

I hate to be a stickler but if you replaced the ingredients to make a brownie with diet coke then you didn’t make a brownie, you made whatever this is.

I’ve made low cal brownie mini muffins with pumpkin and cake mix instead of the regular ingredients. It’s a WW staple.
I call them my shitmuffins. They make your bowels dance.

I honestly feel like it’s that the really tall, deep pan kept it from cooking through properly rather than the coke being an issue.
